TGIF Beef Stroganoff w/ Broccoli

I've had an alright day. Library, lots of pinteresting, and facebooking, and ordering books. One of our volunteers didn't show up this morning so I had to spend my morning at the front desk and the volunteer who works in the afternoon asked to leave 15-30 minutes earlier to avoid the parade. And to top it off, another co-worker called in to let us know they wouldn't be able to work tomorrow AND Friday is usually the day we are the most understaffed anyhow as 2 of my co-workers do not work on those days and another one took the day off. It frustrates me that people just can't keep their appointments and commitments. They take it so lightly, it's unbelievable. The thing is I never do that, and in the case that I do need the day off, nobody has to fill in for me, no one has to be inconvenienced. Oh people.... I am very disappointed in people. In general. But..... aside from that I had a pretty good day. I pinterested a lot, if you don't know pinterest you may want to check it out at www.pinterest.com . Another link I love is www.polyvore.com.
As far as diet and exercise go, I haven't worked out yet today, there's still time. I did eat well, ate a variety of low calorie foods and snacks. I will post the link to my fitness report later tonight, it should be at the bottom of this post.
Dinner was very filling. I had TGI Friday's Prime Rib Stroganoff, which I added broccoli to. It was so very filling and yummy! I didn't add any other seasonings aside from 3/4 cup of chopped frozen broccoli for an extra fiber, it was the only veggie I had at hand today. For breakfast I had the same thing I had yesterday, my new favorite meal: egg, turkey and cheese sandwich! Lunch was Lean Cuisine Chicken Fettuccine which was also delicious, not very filling, wish I had veggies to add to it or maybe a side salad, but it was good. I also had a snack (yum), Lean Cuisine Casual Cuisine - Broccoli Cheddar Dip With Pita Bread. Amazing! 200 calories, but it's 2 servings. It comes with separate servings of dip, and 2 separate servings of pita. I am pretty content with my meal options so far. I have been logging my meals and workouts for 11 days today. I have not weighed in yet this week, not sure what to expect. I will weigh in tomorrow morning and hope I at least lost 1 lb this week, which is my plan... slow and steady, 1 lb a week. So if it all works out, I should weigh in at 207lbs tomorrow. It's difficult to see the exact weight since it's not a digital scale, so I may decide it's 207 if it looks closer to 200 than 210 :-) Wish me good luck! (Good Luck!). I need to increase my water intake too, didn't drink much water today. I bought Splenda w/antioxidants and I HATE it! I have been using sugar for a while now, refined and brown sugar, and I did try agave, but decided to go back to sweetener to cut back on the calories, since the calories really add up if you have 2 cups of coffee with around 4 tsp of sugar (total), I'd rather use those calories on something else. I may go back to just regular Splenda, I don't remember the regular Splenda being that bitter. When I go out, which is not often these days, I have been drinking very light (shitty) beer, the lightest beer they happen to have, at Southwind it is Bud Light and Miller Light. Other than that I haven't been drinking at home, at all. Go me!
Oh well, maybe I should get off the computer and go burn some calories! Have a good night and a good evening everyone!

Tonight's Dinner

Lean Cuisine Chicken Carbonara, spinach sauteed with a little olive oil and garlic and a whole wheat roll. Very satisfying. I like to add parsley to my frozen dinners, and if I have any calories left I may add a measured serving of grated parm too, salt, pepper, lemon or lime juice, anything to just make it my own without adding too many calories. Try it!

New Beginning... in Mathews... Where we Still are

So much for starting over in a new place! It so turns out we didn't move away, but moved within our small town of Mathews, VA. New home, same town. Much smaller home, a temporary rental until we buy our dream home, hopefully within 6 months - 1 year. My favorite room in the house is my new kitchen:

I love the stainless steel appliances, the white cabinets, the convection oven and the counter. Not usually a fan of galley kitchens, wish there was more room to groove.
Anyhow, that's my new kitchen where I've been cooking up some delicious meals using local produce from the CSA. I cooked a yummy soup, and baked a butternuts squash pie and bread, shrimp scampi over spaghetti squash, among other things. Now I am taking a break from cooking during the week so I can better control my calorie intake, and only cook on weekends.
I am using myfitnesspal to log my meals, water intake and workouts, and I really like the app. You can use it online and sync it with your phone. You can even scan the barcodes from the packaging so you don't even have to search for your foods, and it has had pretty much everything I scanned, even store brands.
Well, I really think I should start another post with these tips... titled something else other than "New Beginning in Mathews"... So come back later to check out my favorite health and fitness apps and websites!
So far only 2 lbs lost, but I started last week! Doing good!
Hope to see you here later!
